What has to be on a legally valid invoice?

It varies by country, but almost everywhere wants: the word “invoice”, a unique sequential number, the date, your business name and address, the customer's name and address, a description of what was supplied, the amount due, and your tax registration number if you are registered. Check your own tax authority's guidance — this tool gives you the fields, not legal advice.

Is tax calculated before or after the discount?

After. The discount comes off the subtotal, then tax is charged on what remains. Applying tax to the pre-discount figure overcharges the customer, and is the kind of error that gets an invoice queried instead of paid.

Are my invoice details stored anywhere?

No. Nothing is sent to a server and nothing is saved between visits, which also means refreshing the page loses what you typed. Download the PDF before you close the tab.
